I continue to answer, little by little, the questions brought to us by @marivic10 for the community contest for week #257. This week's second question brings back very sweet memories.

The first sweet I learned to make was dulce de leche. The one made with curdled milk.

I knew the theory since I was little. I remember that back in the day, there was always plenty of milk in my house. My grandmother made sure we never ran out for breakfast and for the other sweets she made me from time to time. The most normal thing in the world was waking up to the smell of milk or coffee. The smell of coffee has been my favorite since that time. There's even a sound I love, and it's the sound of coffee brewing.

However, I remember that morning as if it were today. It was a Saturday. The smell in the house was completely different, sweeter. No coffee, no milk. When I got to the kitchen, I found my grandmother stirring the pot from which the smell was coming. When I looked at her, clearly asking, "What are you doing, Grandma?", she replied that the milk had curdled and that what we were having for breakfast that day was a surprise. Then she asked me to pass her the sugar and explained how the dessert was made.

Once the milk has curdled, we put it over high heat, as if we were going to boil it, but this is to allow the whey to evaporate. Meanwhile, we add sugar to taste and stir. When the whey evaporates, we're left with a kind of lumpy cream at the bottom. We know it's ready when it begins to bubble slowly.

My grandmother would wait for it to start to settle to the bottom. It's true that this gives it a richer, stronger flavor, but I like it less stiff, creamier. That's why I don't wait for it to settle, but rather when it's about to.

Some people add a little vanilla or lemon zest, but I like it just like that, with just the sugar. It doesn't need anything else. It's a simple dessert to make and was born from a negative situation. It's like the saying goes, every cloud has a silver lining. You cut the milk, you get a piece of candy. My kids love it, by the way, and they already know how to make it.

Continúo respondiendo, poco a poco, las preguntas que nos trae @marivic10 para el concurso de la comunidad para la semana #257. La segunda pregunta de esta semana me trae muy dulces recuerdos.

El premier dulce que aprendí a hacer fue el dulce de leche. Ese que se realiza con la leche cortada. La teoría la conocí desde pequeña. Recuerdo que en aquellos tiempos, en mi casa siempre hubo bastante leche. Mi abuela se aseguraba que nunca nos faltara para el desayuno y para hacer los otros dulces que de vez en cuando me hacía. Lo más normal del mundo era que me despertara con el olor de la leche o del café. El olor del café es mi preferido desde aquella época. Incluso, hay un sonido que me encanta, y es el del café cuando cuela.

Sin embargo, recuerdo aquella mañana como si fuera ahora. Era sábado. El olor de la casa era completamente diferente, más dulce. Ni café ni leche. Cuando llego a la cocina, me encuentro a mi abuela revolviendo la olla de donde provenía el olor. Ante mi mirada que preguntaba con toda claridad ¿qué estás haciendo, abuela?, ella me contestó que la leche se había cortado y que ese día lo que desayunaríamos era una sorpresa. Luego me pidió que le pasara el azúcar y me fue explicando cómo era que se preparaba el dulce.

Una vez que se corta la leche, la ponemos a fuego alto, como si fuéramos a hervirla, pero es para que el suero se evapore. Mientras tanto, le vamos echando el azúcar a gusto y lo revolvemos. Cuando el suero se evapora, nos queda una especie de crema grumosa en el fondo. Sabemos cuando está cuando comienza a burbujear con lentitud. Mi abuela esperaba a que se comenzara a agarrar al fondo. Es cierto que eso le da un sabor más rico y fuerte, pero a mí me gusta menos dura, más cremosa. Por eso no espero a que se agarre, pero sí cuando esté a punto de hacerlo.

Hay quienes le agregan un poco de vainilla o ralladura de limón, pero a mí me gusta así, solo con el azúcar. No necesita más. Es un dulce sencillo de confeccionar y nacido de una situación negativa. Es como dice el dicho, no hay mal que por bien no venga. Se corta la leche, pues ganamos un dulce. A mis hijos les encanta, por cierto y ya saben cómo hacerlo.

    Si supieras las nostalgias que me despiertas. A mi abuelo materno le encantaba ese dulce de leche "de bolitas" nos peleábamos en broma por las raspas de la olla. Y mira por dónde, si te gusta como a mí la versión más cremosa te tengo un tip: añade un huevo batido a la mezcla, verás que suavidad
