Its been a while since I posted about meals that I've made. The last post on the subject was back in the winter or maybe early spring.
At that time I was eating a lot of stews - beef bourguignon or what I would call "Irish stew," which to me is effectively the same thing, but made with a stout beer instead of wine. All of my stews are pretty much the same with only minor substitutes of ingredients. Anyway, With the warmer weather of summer and early fall, I haven't been making stews as much.
These are just some the meals I've made over the past few months. They are all pretty simple (meat and vegetables and maybe a starch) and all are always served with a fresh green salad that isn't shown in the photos. The salads are always similar to the one below minus the added protein.
This one was a lunch so it was larger than the usual and had a lot more protein added - quinoa and eggs.
This summer I made a lot of ribs. I was basically buying them anytime they went on sale at the grocery store and for a time was making them every Sunday pretty it seemed.
I would alternate between Baby back and St. Louis style depending on the sales. I basically made them the same each time, slow roasted in the oven with the same spice and sauce mixture. The accompaniements that I served them with would always vary but in this instance they were served with a caprese salad.
We don't eat fish very often at home because its hard to get wild caught fish at the grocery store here and farmed fish can be pretty gross at times. Every now and then wild caught becomes available and we go for it. This meal was white fish (either haddock, halibut, or pickeral, I completely forget) and I served it with rice and sweet potatoes.
Steak is another meal I rarely make. Its expensive and I often don't really even care for it. I find it tough and lacking flavor. Its another one that we buy only on occasion. I marinated this one. Check out the cross hatching I did on the BBQ. Its actually very easy to achieve. Place it on the grill on a 45Β° angle, let it sit and minute or two depending on the thickness of the steak and then shift it to the opposite side at a 45Β° angle. Then do the same when you flip the steak over. Does that make any sense to anyone?
Some of my meals are odd I'll admit. This one was BBQ Chicken thighs, carrots and roasted cabbage.
And this one I clearly just gave up on. BBQ chicken breast, potato and a single roasted carrot??? My guess is that this was at the end of the week when I was running out of vegetables.
Next is breaded chicken breast with a honey mustard sauce, roasted potatoes and roasted peppers.
Next is a simple mix of sausage, onions, carrots, peppers and zucchini with hoisin sauce.
Another breaded chicken, baked potato with fried onions and more roasted carrots.
Okay this is another salad that I ate for lunch one day. I added sardines for protein. I wouldn't blame you if you thought it was gross. I know that not everyone likes sardines.
A simple hamburger and wedge potatoes. This just looks like a quintessential burger to me. It looks good - no?
Chicken breast with a homemade honey mustard sauce, served with broccoli, carrots and a baked potato with fried onions.
Pork tenderloin, roasted carrots...again, zucchini and baked potato with more fried onions. The sides are often the same. I'm a creature of habit I guess.
Every once in a while we get sushi as take out at a restaurant close to our house. It so colorful, right?
And finally, ending with dessert, my wife made a black forest cake a little while back. Its becoming somewhat of a signature dessert for her because its my favorite.
